Raw Creamy Coconut Yogurt with Fruit and Granola

You can use it to make soups, lush dairy free chocolate puddings and memorable Indian chutneys. Personally I love it in this recipe because it tastes exactly like dairy yogurt. So here you go, this easy, lovely coconut yogurt that is sure to astound you!
Ingredients
2 cups of thawed young thai coconut meat
1 tablespoon of lemon juice
1 tablespoon of light agave or light maple syrup
Pinch of pink himalayan sea salt (or regular sea salt)
½ cup of water or coconut water
Kitchen Equipment
High Quality Blender/ Vitamix
Spatula
1 storage container
How To Make It
Add the liquid ingredients to blender first. Then add thawed coconut meat, sweetener and sea salt. Blend well until completely creamy.
Take spatula and scrape out of blender into your container. Keep in fridge to firm up to 3 hours to overnight.
To plate: Place yogurt on the bottom of your bowl and top with your favorite sliced fruit and granola.
