Raw Creamy Coconut Yogurt with Fruit and Granola

Am about to demystify making raw coconut yogurt!  It is the easiest thing in the world. So easy you will probably smack your head at the simplicity, It is creamy and so lush, the hardest part of this recipe is ordering young thai coconut meat. This is an ingredient that can be found at Asian or Indian stores or you can order online here or might be able to find on Instacart depending on your location. Trust me, the purchase is worth it! You can use it to make soups, decadent dairy free chocolate puddings, and memorable indian chutneys. Personally I love it in this recipe because it tastes exactly like dairy yogurt without you know, the dairy which I prefer not to have in my own diet.  So here you go, this easy lovely coconut yogurt that is sure to astound you in its simplicity.

Kitchen Equipment You Need:

Ingredients

2 cups of thawed young thai coconut meat

1 tablespoon  of lemon juice

1 tablespoon of light agave or light maple syrup

Pinch of pink himalayan sea salt (or regular sea salt)

½ cup of water or coconut water

High Quality Blender/ Vitamix

Spatula

16 oz (2 cup) tupperware with lid, quart container works here

How to Make

  1. Add the liquid ingredients to blender first, then add thawed coconut meat, sweetner and sea salt

  2. Blend well until completely creamy

  3. Take spatula and scrape out of blender into your tupperware container or quart container. Close and keep in fridge to firm up for 3 hours to overnight.

  4. To plate: Place yogurt on the bottom of your bowl and top with your favorite sliced fruit and granola. In the picture above I am using blank granola, along with cantalope, fresh kiwis, raspberries and figs. Simple and good!
